Cinnamon roll cookies

First of all, THE SMELL. It's enough to get you right into the holiday spirit and maybe even believe in Santa again.


INGREDIENTS:


Cookies:

2 1/4 cups almond flour

1/2 cup maple syrup/agave blend (TJ's)

1/4 cup coconut oil (melted)

1 tsp vanilla extract

1/2 tsp baking soda

pinch of salt


Filling:

1/2 cup coconut sugar

2 tbsp cinnamon

Just enough maple syrup/agave blend to make mixture moist


DIRECTIONS:

Preheat oven to 350. Mix cookie batter well until it becomes a dough. Grease cupcake tins. (Makes 12 cinnamon rolls). Sprinkle GF flour (or flour of choice) onto a cutting board. Roll out dough on the cutting board with flour and use a rolling pin or bottle of wine to get the dough rolled out flat. Cut dough into long strips. Take one strip, line with filling (less is more), and then roll into a circular shape to form the cinnamon roll. Place the cinnamon roll dough into one muffin tin. Repeat. Bake for about 10-12 mins or just until slightly firm on the outside. Remove, let cool. Enjoy with a hot cup of coffee!
